Sweet Treat

I brought a sweet treat to a friend’s BBQ yesterday, cheesecake stuffed strawberries. They turned out great and they were a big hit at the party. They are relatively easy to make, you just have to be patient when you are coring the strawberries. I doubled the recipe to be sure there was enough for about 30 people.

Use a small paring knife to core the strawberries

I used about 4 graham crackers for the topping, just place them in a zip block bag and break them up with your hands.

Cheesecake stuffed strawberries with graham cracker topping

1 lb large strawberries
8 oz. cream cheese, softened (can use 1/3 less fat)
1/4 c. powdered sugar
1 tsp vanilla extract
graham cracker crumbs

1. Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out with a paring knife. Prep all strawberries and set aside.
2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or ziploc with the corner snipped off. Fill strawberries with cheesecake mixture. Once strawberries are filled, dip the top in graham cracker crumbs. If not serving immediately, refrigerate until serving.
