Avocado in pasta sauce? Brilliant. Avocados go way beyond guacamole these days. I add avocado to toast, sandwiches and salads. So creamy and tasty. The other day I decided to feature the avocado with pasta. Along with garlic and Parmesan cheese, it was a match made in heaven.
1/2 Ib. uncooked pasta of your choice
1 large, ripe avocado
1/4 c grated Parmesan cheese
1 clove of garlic, peeled and smashed
3 fresh basil leaves
1 t olive oil
1 T lemon juice
3 T milk
1 t salt
pinch of black pepper
Prepare pasta according to directions on the package. Meanwhile, combine the remaining ingredients in a food processor and pulse until smooth. Once the pasta is ready, toss the avocado sauce with the hot pasta until the pasta is coated. Serve immediately. Garnish with additional fresh basil and Parmesan. Makes two dinner portions or four side portions.
